Do you want something fresh for dessert or an ice cream break throughout the day? This soup quickly becomes a real guilty pleasure! The little extra: add a few red berries to give color and pep to your peach soup.
What I need:
For 6 persons
Total preparation time: 40 minutes, including exposure time.
- 7 Peaches or vineyard peaches
- 1 bunch of fresh mint
- 60 cl of water
- 300 g caster sugar
- 1 Lemon
Steps :
- Wash the mint and remove the stems. Boil water and sugar in a saucepan, then add fresh mint leaves. Leave to infuse for 15 minutes and filter through a strainer. Set a few mint leaves aside for garnish.
- Peel 6 peaches, remove pit and cut into quarters. Add the lemon.
- In a blender, combine the cooled syrup with the peaches and blend until the soup is smooth. Then strain and refrigerate for at least 30 minutes.
- Peel the remaining peach, remove the pit and cut into small dice. Chop a few mint leaves.
- Pour the very cold soup into a dish or directly into ramekins, add a few diced peach and chopped mint.
