Do you want something fresh for dessert or an ice cream break throughout the day? This soup quickly becomes a real guilty pleasure! The little extra: add a few red berries to give color and pep to your peach soup.

What I need:

For 6 persons
Total preparation time: 40 minutes, including exposure time.

  • 7 Peaches or vineyard peaches
  • 1 bunch of fresh mint
  • 60 cl of water
  • 300 g caster sugar
  • 1 Lemon

Steps :

  1. Wash the mint and remove the stems. Boil water and sugar in a saucepan, then add fresh mint leaves. Leave to infuse for 15 minutes and filter through a strainer. Set a few mint leaves aside for garnish.
  2. Peel 6 peaches, remove pit and cut into quarters. Add the lemon.
  3. In a blender, combine the cooled syrup with the peaches and blend until the soup is smooth. Then strain and refrigerate for at least 30 minutes.
  4. Peel the remaining peach, remove the pit and cut into small dice. Chop a few mint leaves.
  5. Pour the very cold soup into a dish or directly into ramekins, add a few diced peach and chopped mint.
