Indeed, it is imperative to store your potatoes in a dark and cool place (around 10°), generally in a cellar. Indeed, light and heat will accelerate the process of sprouting, softening or rotting of your potatoes. So, to avoid the heat, we think that we could keep them in your fridge. However, this idea is not the right one because our dear potatoes are rich in starch and this one will secrete toxins because of the cold. The best place is therefore the cellar. It is also important to keep them in a container that allows air to circulate, such as a crate, a net, a burlap bag or a wicker basket. Above all, do not put them in an airtight box or in a plastic bag, otherwise they will rot very quickly because the air will not circulate.
